{ Southwestern Style Quesadillas }

I didn't know what to make for dinner tonight.. It's one of those nights where I want something good, fast and easy! I browsed the fridge and pantry, and here's what I came up with... southwestern style quesadillas. They were delicious!! Here's what you're going to need:
  • tortillas
  • mild or sharp cheddar cheese, shredded
  • corn
  • canned black beans
  • sour cream
  • lettuce, onions, olives (for toppings)
  • taco sauce, optional
Start by warming your skillet and spraying with a light cooking spray, fill half of the tortilla with cheese, corn and black beans. Fold over. Let cook until each side is lightly browned. Repeat for your desired amount of quesadillas. Top with a dollop of sour cream, onions, lettuce, olives and taco sauce. Or any other preferred toppings. This dinner is super delish, quick ( took me about 10 minutes start to finish ), and the kids loved it!
