Copycat BJ's Brewhouse Pizookie!!

My husband and I are both fans of BJ's Brewhouse restaurant. I'm a big sweets fan, so I always look forward to getting dessert. They offer a wide variety of what they consider a "pizookie"; a warm cookie topped with a couple scoops of vanilla ice cream. I found a fantastic copy-cat recipe to make your own at home!



You will need:
Round cake pan
1 stick butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1 egg
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chunks
** I didn't use as much chocolate in mine and added a little bit of caramel, as well.
Preheat oven to 350 Cook 15-20 minutes.

Step One:

Melt your stick of butter in the cake pan.


Step Two:

Add granulated sugar and brown sugar to melted butter, and stir. Add vanilla.
After you've mixed well, add your egg and whisk with a fork.



Step Three:

After mixing butter, sugar, vanilla and egg together, add your flour,
baking soda and salt. Mix very well making sure dough is even.


Step Four:

Add your chocolate; or any other ingredients you wish. In my case, caramel.



Step Five:

Place prepared dough in a pre-heated oven at 350 degrees for 15-20 minutes.
Once cookie is at desired crispiness, take out of the oven, cool for 3-5 minutes.
Top with a few scoops of vanilla bean ice cream, and enjoy!!





Hubby gives it a big thumbs up!

  2. This recipe has become a staple for me! I make it all the time for friends. We all sit in a circle on the floor, spoons in hand and just go at it! Once they've had it, they won't stop asking me for it haha I always add white chocolate and butterscotch chips along with the chocolate chips. It is a delicious, gooey mess!!!
