Chocolate Chip Cookies - - Skinny Style!

Last time I was at the library, I saw a book "sweet & skinny: 100 recipes for enjoying life's sweeter side without tipping the scales", thought I'd give it a try! Came across a recipe for chocolate chip cookies, which I made a ton of this past holiday season, and used lots of butter, ugh. Wait til' you see how simple this recipe is.. Here's what you'll need:
  • 2 cookie sheets
  • nonstick cooking spray
  • 1 cup minus 1 tablespoon all- purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/3 cup butter, softened
  • 2/3 cup packed brown sugar
  • 2 tablespoons liquid egg substitute
  • 1 tablespoon nonfat or 1% milk
  • 1/2 teaspoon pure vanilla extract
  • 2/3 cup semisweet chocolate chips
Preheat oven to 350. Coat two pans with nonstick cooking spray. In a small bowl, combine flour, salt and baking soda, mix and set aside. In a medium- sized bowl, add softened butter and brown sugar, stirring until smooth. Add egg substitute, milk, and vanilla. Mix in the flour mixture, until well combined. At this point, I go ahead and scoop my cookies using a cookie scoop spoon, place them on the cookie sheets, and add chocolate chips, nuts, etc. This time, I used semi-sweet chocolate chips and white chocolate chips. I added three morsels to each cookie. Bake each sheet 8-10 minutes, or until cookies are brown on the edges. Rotate pan from front to back and cook an additional 1-2 minutes. Repeat for the remaining cookie sheet. Transfer cookies directly to wire racks to cool.

The fact that these cookies were so yummy and used almost HALF the butter my other chocolate chip cookie recipe did, makes these a keeper for me!! Despite this recipe being so simple, the best part is, there is only 90 calories and 3.5 grams of fat per cookie!
