{ Easy Mini Pizzas }

Our family loves pizza and since I've been watching what I eat, I've came up with a few healthy alternatives to expensive, fattening delivery. For this recipe I used sandwich skinnies, they're made of whole grains and fiber and are 100 calories for the two slices. I make some with pizza sauce and desired toppings, and some I brush with a small amount of olive oil, light mozzarella cheese and fresh veggies.

The kids and I love these! But to my surprise my husband and Dad raved over them the other night! Super quick, healthy and delicious.. I'll take it!

  1. Visiting from Mom's Monday Mingle. Glad to discover your website. What a great idea with the mini pizzas -- I'll have to try those with my boys. I hope you'll share it at this week's Friday Flash Blog on The Jenny Evolution (www.thejennyevolution.com). Would love to have you join our community.

  4. Love these - I've always used biscuit dough (from a tube) rolled out for mini pizza bases but like that yours are healthier!

  5. Mmm. I love pizza. I usually use english muffins, but this sounds so much better. I've never heard of sanwich skinnies, but they sound awesome! Next time you should take a pic of the packaging so I know what to look for :)

    1. Tina, they're in the bread section more than likely the packaging will say 100% whole wheat, sandwich flats or skinnies! I bought mine from Aldis! Hope you can find them :)
